Vegan California Burrito Bowl

Ingredients

The base

  • 4 cups chopped salad greens
  • 2 cups prepared Spanish brown rice
  • 1 15-ounce can black beans or black soybeans

The toppings

  • 1 large avocado
  • 1 large tomato
  • 4 radishes thinly sliced
  • ½ medium red onion
  • 2 stalks green onion
  • ¼ cup chopped cilantro
  • ½ cup shredded plant-based Mexican-style cheese
  • ½ cup prepared cashew cream
  • 1 lime quartered
  • 4 ounces corn tortilla chips

Instructions

  1. Line the bottom of four individual bowls with 1 cup of chopped lettuce each.
  2. Add ½ cup of prepared Spanish rice into each bowl.
  3. Add ½ cup of black beans or black soybeans to each bowl.
  4. Place ¼ of the avocado slices into each bowl.
  5. Add ¼ of the tomato slices into each bowl.
  6. Add 1 sliced radish into each bowl.
  7. Place ¼ of the sliced red onion into each bowl.
  8. Top each bowl with sliced green onions, chopped cilantro, shredded cheese, cashew cream, and a quarter of lime.
  9. Serve each bowl with 1 ounce of corn tortilla chips.
  10. Serve immediately or prepare for meal prep in individual glass dishes.
