Ingredients

The Burrito Bowl

  • 1 cup dry white long-grain rice
  • 1 tablespoon refined coconut oil or vegan butter
  • as needed salsa
  • as needed sliced green onion
  • as needed sliced grape tomatoes (optional)

The Spicy Black Beans

  • 2 tablespoons refined coconut oil or extra-virgin olive oil
  • 1 cup diced sweet onion
  • 4 medium garlic cloves, minced
  • ¾ to 1 cup chopped fresh tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (optional)
  • ½ plus 1/8 teaspoon fine sea salt, or to taste
  • 2 ½ tablespoons tomato paste
  • 1 can (14-ounce) black beans, drained and rinsed
  • ½ cup unpacked cilantro, finely chopped

The Avocado-Lime Sauce

  • 1 large garlic clove
  • 1 large avocado, pitted
  • 1 tablespoon fresh lime juice, plus more to taste
  • 1 tablespoon water
  • ¼ teaspoon fine sea salt, or to taste

Instructions

  1. Cook the rice with oil or butter and water until tender.
  2. In a skillet, heat oil and sauté onion and garlic until softened.
  3. Add chopped tomatoes, spices, and salt, and cook until tomatoes soften.
  4. Stir in tomato paste and black beans, heating through, then add cilantro.
  5. For the sauce, blend garlic, avocado, lime juice, water, and salt until smooth.
  6. Assemble bowls with rice, black beans, salsa, and avocado-lime sauce, garnishing as desired.
