The Avocado-Lime Sauce

Instructions
- Cook the rice with oil or butter and water until tender.
- In a skillet, heat oil and sauté onion and garlic until softened.
- Add chopped tomatoes, spices, and salt, and cook until tomatoes soften.
- Stir in tomato paste and black beans, heating through, then add cilantro.
- For the sauce, blend garlic, avocado, lime juice, water, and salt until smooth.
- Assemble bowls with rice, black beans, salsa, and avocado-lime sauce, garnishing as desired.
