Ingredients

The base

  • 3 cups Cilantro Lime Rice, or cooked white or brown rice

The protein

  • 2 cups cooked black beans, or pinto beans
  • 1 recipe Tofu Sofritas

The veggies

  • 1 recipe Fajita Veggies, or fresh veggies like romaine lettuce, cherry tomatoes, and corn

The toppings

  • 1 recipe Pico de Gallo, or Tomatillo Salsa, Homemade Salsa, or Corn Salsa
  • 1 recipe Guacamole
  • to taste Sea salt and freshly ground black pepper
  • for serving Lime wedges

Optional toppings

  • to taste Pickled Red Onions
  • to taste Pickled JalapeƱos
  • to taste Sour cream, or Vegan Sour Cream
  • to taste Cotija, feta, or shredded cheddar cheese
  • to taste Fresh cilantro leaves

Instructions

  1. Divide the rice among four bowls.
  2. Top each bowl with the beans, sofritas, fajita veggies, salsa, and guacamole.
  3. Garnish with desired toppings and season with salt and pepper.
  4. Serve with lime wedges.
