Instructions
- Cook the rice according to the instructions.
- In a large bowl, combine the beans, tomatoes, corn, onion, pepper, and Napa cabbage.
- Dress the mixture with half the mango dressing and adjust to taste.
- Divide the rice into 4 bowls and top with the dressed vegetable mixture.
- Add avocado and any optional toppings.
