Ingredients

The base

  • 2 cups cilantro lime rice
  • 2 cups black beans

The vegetables

  • 1 cup chopped tomatoes
  • 1 cup corn
  • 2 tablespoons diced red onion
  • 1 whole orange pepper, chopped
  • 2 cups chopped Napa cabbage

The dressing

  • ½ cup mango dressing or to taste

The toppings

  • 1 whole avocado, chopped
  • to taste grated cheese (optional)
  • to taste sour cream (optional)
  • to taste crushed tortilla chips (optional)
  • to taste lime (optional)
  • to taste salsa (optional)

Instructions

  1. Cook the rice according to the instructions.
  2. In a large bowl, combine the beans, tomatoes, corn, onion, pepper, and Napa cabbage.
  3. Dress the mixture with half the mango dressing and adjust to taste.
  4. Divide the rice into 4 bowls and top with the dressed vegetable mixture.
  5. Add avocado and any optional toppings.
  6. Serve immediately or refrigerate and warm before serving.
