Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Cut sweet potatoes into small strips, toss them with olive oil, and lay them flat on the baking sheet. Bake for 40 minutes, tossing occasionally.
- Heat a pan over medium-high heat and add olive oil. Sauté the diced onion for 2-3 minutes until softening, then add ground beef and cook until no longer pink.
- In three large bowls, divide the lettuce evenly, then add the meat and onions, followed by the tomatoes, pickles, and cheese.
- In a small bowl, whisk together all the sauce ingredients.
- Add sweet potatoes to each bowl, drizzle with sauce, and enjoy!
