Ingredients

The Burger Bowl

  • 1 lb lean ground beef or ground turkey
  • 8 oz leafy greens of choice (about 8 cups)
  • to taste burger toppings (pickles, onions, tomatoes, cheese, bacon, etc.)
  • optional oven-roasted sweet potato wedges or frozen French fries

The Sweet Potato Wedges

  • 2 medium sweet potatoes
  • 1 tablespoon avocado oil
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • to taste coarse salt and chopped parsley

The Special Sauce

  • ½ cup mayonnaise
  • 2 tablespoons no-sugar-added ketchup
  • 2 tablespoons diced pickles
  • 2 teaspoons Dijon or yellow mustard
  • 1 teaspoon white vinegar or apple cider vinegar
  • ½ teaspoon onion powder
  • to taste fine salt and black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. Slice the sweet potatoes into wedges and place them on the baking sheet.
  3. Combine avocado oil, garlic powder, and chili powder, then drizzle over the sweet potatoes and toss to coat.
  4. Bake the sweet potatoes for 25-35 minutes, flipping when the undersides are browned.
  5. While the sweet potatoes bake, prepare the Special Sauce by mixing all sauce ingredients in a bowl and adjusting seasonings.
  6. In a skillet over medium-high heat, cook the ground beef until no longer pink, seasoning with salt and pepper.
  7. Assemble the bowls with leafy greens, cooked ground beef, avocado, bacon, and desired toppings.
  8. Add sweet potato wedges to the side and drizzle with Special Sauce.
