Ingredients

  • 1 each green pepper, diced
  • ½ each onion, diced
  • 1 lb ground beef
  • 1 batch taco seasoning
  • 2 cups riced cauliflower
  • to taste salt and pepper
  • to taste salsa, avocado, tomatoes, olives, and any other toppings you love
  • to taste spinach + cabbage, or your favorite greens

Instructions

  1. Cook the diced green pepper and onion in a skillet until the onion is translucent.
  2. Add the ground beef to the skillet, breaking it up as it cooks.
  3. In a separate skillet, cook the riced cauliflower with salt and pepper until tender.
  4. Once the beef is nearly cooked, add the taco seasoning and mix well.
  5. Assemble the bowls by layering greens, cauliflower rice, and the seasoned beef.
  6. Top with your favorite toppings and enjoy.
