Ingredients

The Taco Meat

  • 2 pounds lean ground beef
  • ¼ cup Homemade Taco Seasoning (or taco seasoning of choice)
  • 3 tablespoons no-salt-added tomato paste
  • cup water
  • to taste fine salt and black pepper

The Salsa Ranch

  • ½ cup salsa of choice
  • ¼ cup sour cream
  • ¼ cup ranch dressing of choice

Optional Toppings

  • as desired shredded lettuce
  • as desired tortilla chips
  • as desired diced tomatoes or halved grape tomatoes
  • as desired sliced black olives
  • as desired shredded cheddar or Monterey jack cheese, or crumbled cotija cheese
  • as desired diced or quick-pickled red onions
  • as desired diced avocado or guacamole
  • as desired fresh chopped cilantro
  • as desired sliced jalapeño
  • as desired lime wedges

Instructions

  1. 1. Heat a large skillet over medium-high heat and add the ground beef, breaking it up as it cooks for 7-9 minutes until no longer pink.
  2. 2. Reduce the heat to medium, add taco seasoning, tomato paste, and water, stirring until combined. Cook for another 2-3 minutes until hot.
  3. 3. In a small bowl, mix salsa, sour cream, and ranch dressing until smooth to prepare the Salsa Ranch.
  4. 4. Assemble the taco bowls with your choice of base and toppings.
  5. 5. Store leftovers in airtight containers in the refrigerator for up to 3 days.
