Ingredients

The plantains

  • 4 pieces yellow plantains

The meat mixture

  • 2 lb lean ground beef
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp apple cider vinegar
  • 2 tbsp dried oregano
  • 1 tbsp paprika
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • tsp Himalayan salt
  • 1 tsp freshly ground black pepper
  • 2 pieces bay leaves
  • 20 large pitted green olives, halved
  • 8 pieces pitted dates, chopped
  • ¼ cup organic raisins
  • 1 6oz can tomato paste
  • 3 cups water

The topping

  • 2.5 oz fresh parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F.
  2. Trim the ends off the plantains and boil them in salted water for 20 minutes.
  3. Remove the plantains and let them cool for 5 to 10 minutes.
  4. Cook the ground beef in a skillet until browned, then add onions and garlic.
  5. Add apple cider vinegar, spices, olives, dates, raisins, tomato paste, and water to the beef mixture.
  6. Cook until the mixture is thick and creamy, then remove from heat.
  7. Peel the cooled plantains and slice them thinly.
  8. In a greased baking dish, layer plantains, half the beef mixture, and repeat.
  9. Top with remaining plantains and sprinkle with parmesan cheese.
  10. Bake uncovered for 40 to 45 minutes until golden brown.
  11. Let the dish rest for 10 minutes before serving.
