The topping

fresh parmesan cheese, grated
Instructions
- Preheat the oven to 375°F.
- Trim the ends off the plantains and boil them in salted water for 20 minutes.
- Remove the plantains and let them cool for 5 to 10 minutes.
- Cook the ground beef in a skillet until browned, then add onions and garlic.
- Add apple cider vinegar, spices, olives, dates, raisins, tomato paste, and water to the beef mixture.
- Cook until the mixture is thick and creamy, then remove from heat.
- Peel the cooled plantains and slice them thinly.
- In a greased baking dish, layer plantains, half the beef mixture, and repeat.
- Top with remaining plantains and sprinkle with parmesan cheese.
- Bake uncovered for 40 to 45 minutes until golden brown.
- Let the dish rest for 10 minutes before serving.
