Fried Plantains
Ingredients
The plantains

yellow plantains
The cooking fat

tablespoons
coconut oil
The seasoning

coarse or flaky sea salt

fresh lime wedges (optional)
Instructions
- Cut both ends from the plantains using a paring knife.
- Pierce the skin of the plantain and draw the knife down the length to cut through the skin.
- Peel the skin off the plantain carefully.
- Preheat a large skillet over medium-high heat.
- Slice the plantain into ¼-inch thick rounds.
- Add half of the coconut oil to the hot pan and swirl to coat.
- Carefully place the plantain rounds in the skillet, cooking for 2-3 minutes on each side until golden brown.
- Remove the fried plantains to a plate and sprinkle with sea salt. Serve with lime wedges if desired.
