Fried Plantains

Ingredients

The plantains

  • 2 medium yellow plantains

The cooking fat

  • 1 ½ – 2 tablespoons coconut oil

The seasoning

  • to taste coarse or flaky sea salt
  • to taste fresh lime wedges (optional)

Instructions

  1. Cut both ends from the plantains using a paring knife.
  2. Pierce the skin of the plantain and draw the knife down the length to cut through the skin.
  3. Peel the skin off the plantain carefully.
  4. Preheat a large skillet over medium-high heat.
  5. Slice the plantain into ¼-inch thick rounds.
  6. Add half of the coconut oil to the hot pan and swirl to coat.
  7. Carefully place the plantain rounds in the skillet, cooking for 2-3 minutes on each side until golden brown.
  8. Remove the fried plantains to a plate and sprinkle with sea salt. Serve with lime wedges if desired.
