Fried Green Plantains (Patacones or Tostones)

Ingredients

The frying fat

  • 4 cups coconut oil, lard, or tallow

The plantains

  • 4 pieces green plantains

The seasoning

  • to taste Diamond Crystal kosher salt

Instructions

  1. Heat the fat in a large dutch oven over medium heat until it reaches 325°F.
  2. Cut the ends off the plantains and make a shallow cut down the length of each plantain without cutting into the fruit.
  3. Slice each plantain into three even pieces, about 2 inches long.
  4. When the oil reaches 325°F, carefully lower the plantains into the oil and fry for 3 to 5 minutes until golden yellow.
  5. Transfer the fried plantains to a paper-towel-lined baking sheet to drain excess oil.
  6. Smash each fried plantain between two pieces of parchment paper until about ¼-inch thick.
  7. Increase the oil temperature to 350°F and fry the smashed plantains until crispy, about 5 to 7 minutes.
  8. Remove the crispy plantains from the oil and place them on a metal cooling rack.
  9. Sprinkle with coarse salt and serve immediately.
