Fried Green Plantains (Patacones or Tostones)

Instructions
- Heat the fat in a large dutch oven over medium heat until it reaches 325°F.
- Cut the ends off the plantains and make a shallow cut down the length of each plantain without cutting into the fruit.
- Slice each plantain into three even pieces, about 2 inches long.
- When the oil reaches 325°F, carefully lower the plantains into the oil and fry for 3 to 5 minutes until golden yellow.
- Transfer the fried plantains to a paper-towel-lined baking sheet to drain excess oil.
- Smash each fried plantain between two pieces of parchment paper until about ¼-inch thick.
- Increase the oil temperature to 350°F and fry the smashed plantains until crispy, about 5 to 7 minutes.
- Remove the crispy plantains from the oil and place them on a metal cooling rack.
- Sprinkle with coarse salt and serve immediately.
