Ingredients

The plantains

  • 2 large green plantains

The seasoning

  • as needed cooking spray
  • as needed kosher salt

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with cooking spray.
  2. Trim the ends off the plantains and score the skins along two sides.
  3. Microwave the plantains until soft in the center, about 6 to 6½ minutes for two plantains.
  4. Peel the plantains and cut them into ¾ inch thick slices while hot.
  5. Smash the hot plantain slices with a flat object until flattened.
  6. Place the smashed plantains on the baking sheet, spray with oil, and season with salt.
  7. Bake until golden on the bottom, about 10 to 12 minutes, then turn and bake until golden and crisp on the other side, about 8 minutes.
  8. Serve hot with additional salt if desired.
