Instructions
- Preheat the oven to 425°F and prepare a baking sheet with cooking spray.
- Trim the ends off the plantains and score the skins along two sides.
- Microwave the plantains until soft in the center, about 6 to 6½ minutes for two plantains.
- Peel the plantains and cut them into ¾ inch thick slices while hot.
- Smash the hot plantain slices with a flat object until flattened.
- Place the smashed plantains on the baking sheet, spray with oil, and season with salt.
- Bake until golden on the bottom, about 10 to 12 minutes, then turn and bake until golden and crisp on the other side, about 8 minutes.
- Serve hot with additional salt if desired.
