Baked Tostones

The Mojo Garlic Dipping Sauce

sour orange juice

fresh squeezed orange juice

lime juice

Instructions
- Preheat the oven to 400°F.
- Spray a baking sheet with cooking spray.
- Peel the plantains and slice them into ½ inch thick slices.
- Toss the slices in a bowl with canola oil and salt.
- Arrange the slices on the baking sheet and lightly coat with more oil spray.
- Bake for 10 minutes or until slightly brown on the bottom.
- Remove from the oven and mash each piece to about a quarter of an inch thick.
- Re-spray the baking sheet and place the plantains brown side up on it.
- Lightly spray the tops and bake for another 15 minutes until golden brown and crispy.
- For the Mojo, heat oil in a small saucepan over low flame.
- Sauté garlic for about 2 minutes, then add sour orange juice, oregano, cumin, salt, and pepper.
- Bring to a boil, then shut off and let cool to room temperature.
