Ingredients

The Tostones

  • 3 medium green plantains
  • 2 tsp canola oil
  • to taste salt
  • as needed spray olive oil

The Mojo Garlic Dipping Sauce

  • cup sour orange juice
  • ¼ cup fresh squeezed orange juice
  • 1 tbsp lime juice
  • 2 tsp olive oil
  • 1 large clove garlic, minced
  • pinch oregano
  • pinch salt and pepper
  • ½ tsp cumin

Instructions

  1. Preheat the oven to 400°F.
  2. Spray a baking sheet with cooking spray.
  3. Peel the plantains and slice them into ½ inch thick slices.
  4. Toss the slices in a bowl with canola oil and salt.
  5. Arrange the slices on the baking sheet and lightly coat with more oil spray.
  6. Bake for 10 minutes or until slightly brown on the bottom.
  7. Remove from the oven and mash each piece to about a quarter of an inch thick.
  8. Re-spray the baking sheet and place the plantains brown side up on it.
  9. Lightly spray the tops and bake for another 15 minutes until golden brown and crispy.
  10. For the Mojo, heat oil in a small saucepan over low flame.
  11. Sauté garlic for about 2 minutes, then add sour orange juice, oregano, cumin, salt, and pepper.
  12. Bring to a boil, then shut off and let cool to room temperature.
