Instructions
- Ensure plantains are at room temperature before peeling.
- Cut off both ends of the plantains and discard the tips.
- Slit the peel along the length of the fruit in 3 places without cutting into the flesh.
- Remove the peel by gently running your fingers between the flesh and peel.
- Cut the peeled plantains into 10 to 12 thick slices.
- Heat coconut oil in a skillet over medium heat.
- Fry the plantain slices for about 2 minutes until golden brown, then flip and fry the other side.
- Remove the plantains and flatten them with a flat object.
- Return the flattened plantains to the skillet and fry for another minute on each side.
- Remove from skillet, sprinkle with salt, and serve immediately.
