Garlic Tostones

Ingredients

  • 2 pieces plantains
  • 1–2 cups oil for frying
  • 1 tablespoon minced garlic
  • 1 cup water
  • to taste sea salt

Instructions

  1. Peel the plantains and cut them into 1-inch thick disks.
  2. Mix the minced garlic with water and set aside.
  3. Heat oil in a large skillet until shiny and hot.
  4. Fry the plantain disks for 3-5 minutes on each side until lightly browned.
  5. Remove the plantains and place them on a paper towel to drain.
  6. Smash the fried plantains to make them half as thick and soak in garlic water for about a minute.
  7. Remove, dry, and return to the frying pan.
  8. Fry again for another 2-3 minutes on each side until golden and crispy.
  9. Drain on paper towels, sprinkle with sea salt, and serve with rice and beans.
