Mongolian Beef Broccoli Rice Bowls

Ingredients

The beef

  • 1 lb beef sirloin (sliced thin)
  • 1 tsp oil (avocado or sesame oil)
  • 1 tsp arrowroot starch or potato starch
  • ¼ c more starch for coating before frying meat

The Mongolian sauce

  • 1 tbsp avocado or sesame oil
  • 1 tsp minced garlic
  • ½ tsp grated ginger
  • ¼ c coconut sugar
  • ¼ c gluten free tamari soy sauce
  • c beef broth or veggie broth
  • extra as needed oil for combining meat and sauce

The bowls

  • 1 head broccoli (equals 3-4 c riced)
  • 1 tsp crushed red pepper flakes
  • 2 scallions chopped
  • as desired sesame seeds
  • as desired fresh chopped cilantro to garnish

Instructions

  1. Prepare all veggies by slicing scallions and Thai peppers, and mincing garlic and ginger.
  2. Marinate the sliced meat in oil and starch for 10 minutes to 1 hour.
  3. In a saucepan, heat oil, garlic, and ginger until fragrant, then add the sauce ingredients and simmer until thickened.
  4. In a skillet, fry the coated beef strips until browned, then add the sauce and coat the meat.
  5. Rice the broccoli in a blender or food processor and steam in the microwave.
  6. Assemble the bowls by adding broccoli rice, then topping with beef and sauce, scallions, red pepper flakes, and sesame seeds.
