Ingredients

The filling

  • 1 cup fresh spinach
  • ½ cup cooked black beans
  • 1 large avocado
  • 1 large roasted red bell pepper
  • cup pickled red onions or chopped scallions
  • 1 large serrano or jalapeño pepper
  • Sea salt
  • Lime wedges

The wrap

  • 4 large flour tortillas

For serving

  • Salsa

Instructions

  1. Divide the spinach leaves among the tortillas.
  2. Top with the tofu scramble, black beans, red peppers, avocado, pickled onions, and serranos.
  3. Season with salt and a squeeze of lime.
  4. Fold the left and right sides of the tortilla over the filling.
  5. Fold the bottom flap up and over the filling, then tuck the sides and roll the burrito.
  6. Wrap in foil, slice, and serve with salsa on the side.
