Hibiscus Cherry and Ginger Beer Ice Cream Floats

Ingredients

Hibiscus Cherry Soda

  • 2 cups fresh or frozen cherries
  • ½ cup coconut sugar or brown sugar
  • 1 teaspoon vanilla bean seeds or vanilla extract
  • 1 cup water
  • 2 tablespoons dried hibiscus flowers (optional)
  • 2 tablespoons lemon juice

The Floats

  • 2-4 scoops vanilla bean coconut ice cream or vanilla ice cream
  • cup hibiscus cherry soda
  • ¾ cup high quality ginger beer
  • 1-2 tablespoons bourbon or coconut rum (optional)
  • to taste blueberries and cherries for serving

Instructions

  1. In a pot, mash the cherries with coconut sugar and vanilla until pulp-like.
  2. Add water and bring to a boil for about 5 minutes.
  3. Remove from heat, add hibiscus, cover, and steep for 30 minutes.
  4. Strain the mixture, stir in lemon juice, and chill until cool.
  5. In glasses, add scoops of ice cream and optional blueberries.
  6. Pour over the cherry soda and top with ginger beer.
  7. Garnish with a cherry and serve.
