Hibiscus Cherry and Ginger Beer Ice Cream Floats

Hibiscus Cherry Soda

dried hibiscus flowers (optional)

vanilla bean coconut ice cream or vanilla ice cream

hibiscus cherry soda

high quality ginger beer

tablespoons
bourbon or coconut rum (optional)

blueberries and cherries for serving
Instructions
- In a pot, mash the cherries with coconut sugar and vanilla until pulp-like.
- Add water and bring to a boil for about 5 minutes.
- Remove from heat, add hibiscus, cover, and steep for 30 minutes.
- Strain the mixture, stir in lemon juice, and chill until cool.
- In glasses, add scoops of ice cream and optional blueberries.
- Pour over the cherry soda and top with ginger beer.
- Garnish with a cherry and serve.
