Japanese-Style Pancakes

Ingredients

The pancake batter

  • 1 cup self raising flour
  • ½ tsp baking powder
  • ¼ cup sugar
  • 1 large egg
  • ¾ cup buttermilk (to make up 1 cup with the egg)
  • ¼ tsp vanilla extract
  • 1 tbsp Japanese mayonnaise

Toppings

  • to taste butter
  • to taste maple syrup
  • to taste ice-cream

Instructions

  1. Sift the dry ingredients into a bowl and mix.
  2. In another bowl, whisk together the egg, buttermilk, and vanilla extract until combined.
  3. Create a well in the dry ingredients and pour the wet mixture in, then mix together.
  4. Add the mayonnaise and mix well until fully combined.
  5. Place a homemade pancake mold on a frying pan over low heat and pour half of the batter into it.
  6. Cover the pan with a lid and cook for 15 minutes.
  7. Once bubbles appear on the surface, carefully flip the pancake using an egg flipper and cook for another 15 minutes.
  8. Check if the pancake is done by inserting a skewer; it should come out clean.
  9. Remove the pancake from the mold and serve with your favorite toppings.
