Poached Chicken

Ingredients

  • 2-3 pounds skinless, boneless chicken breast or thighs
  • 4 cloves garlic, smashed
  • 1 stalk celery, chopped
  • 1-2 medium onion, sliced
  • 1 leaf bay leaf
  • 2-3 sprigs fresh thyme
  • 1 sprig rosemary
  • 1 teaspoon peppercorn
  • to taste salt
  • to serve, optional lemon slices

Instructions

  1. Place the chicken in a large Dutch oven, saucepan, or pot and cover with water by about an inch.
  2. Add garlic, celery, onion, bay leaf, thyme, rosemary, peppercorns, and salt.
  3. Heat on medium until it begins to simmer.
  4. Once simmering, cover and cook for 10-12 minutes.
  5. Check doneness using an instant-read thermometer; it should read 165°F.
  6. Remove the chicken and let it cool slightly before slicing or chopping.
  7. If storing, let it cool completely and refrigerate for up to 3-4 days or freeze for up to a month.
