Instructions
- Place the chicken in a large Dutch oven, saucepan, or pot and cover with water by about an inch.
- Add garlic, celery, onion, bay leaf, thyme, rosemary, peppercorns, and salt.
- Heat on medium until it begins to simmer.
- Once simmering, cover and cook for 10-12 minutes.
- Check doneness using an instant-read thermometer; it should read 165°F.
- Remove the chicken and let it cool slightly before slicing or chopping.
- If storing, let it cool completely and refrigerate for up to 3-4 days or freeze for up to a month.
