Ingredients

The meatloaves

  • lbs ground beef
  • ¾ cup gluten-free bread crumbs
  • 1 large egg
  • ½ medium onion, diced
  • 1 medium green bell pepper, diced
  • ½ cup paleo BBQ sauce
  • 2 tsp coconut aminos
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp cracked black pepper

The sauce

  • ½ cup paleo BBQ sauce
  • 2 tbsp maple syrup

Other ingredients

  • 1 lb Brussels sprouts, cut in half
  • 2-3 medium sweet potatoes, cut into cubes
  • 1-2 tbsp avocado oil
  • 2 tbsp maple syrup
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat the oven to 400°F and prepare a sheet pan with nonstick spray.
  2. Cut the Brussels sprouts in half and cube the sweet potatoes to match the size of the Brussels sprouts.
  3. Spread the veggies on the sheet pan, drizzle with avocado oil, and season with salt and pepper.
  4. Drizzle 2 tablespoons of maple syrup over the sweet potatoes.
  5. In a bowl, mix the ground beef, bread crumbs, egg, coconut aminos, garlic powder, salt, pepper, and ½ cup of BBQ sauce.
  6. Create divots in the vegetables for the meatloaves and form the meat mixture into 6 oval loaves, placing them in the divots.
  7. Mix ½ cup of BBQ sauce with 2 tablespoons of maple syrup and brush half on top of the meatloaves.
  8. Bake in the oven for 15 minutes, then stir the vegetables.
  9. Return to the oven and bake for an additional 10-15 minutes until the meatloaves reach 165°F.
