Maple BBQ Mini Meatloaves with Sweet Potatoes and Brussels Sprouts

Instructions
- Preheat the oven to 400°F and prepare a sheet pan with nonstick spray.
- Cut the Brussels sprouts in half and cube the sweet potatoes to match the size of the Brussels sprouts.
- Spread the veggies on the sheet pan, drizzle with avocado oil, and season with salt and pepper.
- Drizzle 2 tablespoons of maple syrup over the sweet potatoes.
- In a bowl, mix the ground beef, bread crumbs, egg, coconut aminos, garlic powder, salt, pepper, and ½ cup of BBQ sauce.
- Create divots in the vegetables for the meatloaves and form the meat mixture into 6 oval loaves, placing them in the divots.
- Mix ½ cup of BBQ sauce with 2 tablespoons of maple syrup and brush half on top of the meatloaves.
- Bake in the oven for 15 minutes, then stir the vegetables.
- Return to the oven and bake for an additional 10-15 minutes until the meatloaves reach 165°F.
