Sheet Pan BBQ Meatloaf Dinner

Ingredients

Vegetables

  • 1 lb sweet potato
  • 12 oz frozen broccoli florets
  • 2 Tbsp olive oil
  • ½ tsp seasoning salt
  • to taste salt and pepper

BBQ Meatloaf

  • ½ lb ground beef
  • 1 large egg
  • 2 Tbsp bread crumbs
  • 3 Tbsp BBQ sauce
  • ¼ tsp smoked paprika
  • tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 400ºF.
  2. Peel and cube the sweet potato into ½ to ¾ inch pieces and place on a baking sheet with the frozen broccoli.
  3. Drizzle olive oil over the vegetables and season with seasoning salt, salt, and pepper. Toss to coat.
  4. Roast the vegetables in the oven for 15 minutes.
  5. While the vegetables roast, mix ground beef, egg, bread crumbs, 1 Tbsp BBQ sauce, smoked paprika, garlic powder, and salt in a bowl until combined.
  6. Shape the meat mixture into two flattened ovals.
  7. After 15 minutes, stir the vegetables and make space for the meatloaves on the baking sheet.
  8. Place the meatloaves in the center and spread 1 Tbsp BBQ sauce on each.
  9. Return to the oven and roast for an additional 20 minutes or until the meatloaves reach an internal temperature of 160ºF.
  10. Plate the meatloaf and vegetables, and serve immediately.
