Instructions
- Preheat the oven to 400ºF.
- Peel and cube the sweet potato into ½ to ¾ inch pieces and place on a baking sheet with the frozen broccoli.
- Drizzle olive oil over the vegetables and season with seasoning salt, salt, and pepper. Toss to coat.
- Roast the vegetables in the oven for 15 minutes.
- While the vegetables roast, mix ground beef, egg, bread crumbs, 1 Tbsp BBQ sauce, smoked paprika, garlic powder, and salt in a bowl until combined.
- Shape the meat mixture into two flattened ovals.
- After 15 minutes, stir the vegetables and make space for the meatloaves on the baking sheet.
- Place the meatloaves in the center and spread 1 Tbsp BBQ sauce on each.
- Return to the oven and roast for an additional 20 minutes or until the meatloaves reach an internal temperature of 160ºF.
- Plate the meatloaf and vegetables, and serve immediately.
