Sheet Pan Turkey Meatloaf Dinner

Ingredients

The vegetables

  • 16 oz carrots, peeled and diced
  • 1 lb baby red potatoes, quartered
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

The meatloaf

  • 1 lb ground turkey
  • 1 small yellow onion
  • 1 large egg
  • 2 tbsp ketchup
  • 2 tbsp BBQ sauce
  • cup almond flour
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper

The sauce to brush

  • 2 tbsp ketchup
  • 2 tbsp BBQ sauce

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine cut carrots and quartered potatoes, drizzle with olive oil, and sprinkle with salt and pepper. Toss until combined.
  3. Spread the vegetables on the baking sheet and roast for 15 minutes.
  4. While the vegetables are roasting, in another bowl, combine ground turkey, grated onion, egg, ketchup, BBQ sauce, and almond flour. Mix until well combined.
  5. Add Italian seasoning, salt, and pepper to the turkey mixture.
  6. In a small bowl, mix together ketchup and BBQ sauce for brushing.
  7. Form the turkey mixture into 6 small loaves and place them on the baking sheet with the vegetables.
  8. Bake for 20 minutes, then brush the tops with the ketchup and BBQ mixture.
  9. Bake for an additional 10 minutes or until the turkey reaches 165°F and the vegetables are roasted.
