Ingredients

The meatloaf

  • lb. ground beef
  • 2 tsp. cooking oil or ghee
  • 1 small onion, minced
  • 3 cloves garlic, minced
  • ½ cup Whole30-compliant barbecue sauce
  • 1 tsp. dried thyme
  • ½ tsp. salt
  • ½ tsp. black pepper

The topping

  • 2 medium sweet potatoes, peeled and cubed
  • 1 Tbsp. coconut oil or ghee
  • ¼ tsp. salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, combine ground beef and set aside.
  3. Heat oil in a skillet and sauté onions until softened, then add garlic and cook until fragrant.
  4. Mix the onion-garlic mixture with the ground beef, adding barbecue sauce, salt, pepper, and thyme.
  5. Divide the meat mixture into 12 muffin pan wells.
  6. Bake for 20 minutes until the meat is cooked through.
  7. Steam sweet potatoes until tender, then puree with coconut oil or butter.
  8. Top meatloaf muffins with the sweet potato mixture and drizzle with barbecue sauce if desired.
