BBQ Meatloaf Muffins with Sweet Potato Topping

Instructions
- Preheat the oven to 350°F.
- In a bowl, combine ground beef and set aside.
- Heat oil in a skillet and sauté onions until softened, then add garlic and cook until fragrant.
- Mix the onion-garlic mixture with the ground beef, adding barbecue sauce, salt, pepper, and thyme.
- Divide the meat mixture into 12 muffin pan wells.
- Bake for 20 minutes until the meat is cooked through.
- Steam sweet potatoes until tender, then puree with coconut oil or butter.
- Top meatloaf muffins with the sweet potato mixture and drizzle with barbecue sauce if desired.
