Bunny Cake

Ingredients

The cake

  • ½ cup milk
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup cake flour
  • 2 tablespoons cake flour
  • 6 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 tablespoons butter

The frosting

  • 1 cup butter
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • ¼ cup heavy cream
  • pinch salt (optional)

For decoration

  • 1 cup sweetened flaked coconut
  • 1 jelly bean for bunny's nose

Instructions

  1. Preheat the oven to 350°F and prepare an 8-inch round cake pan.
  2. Mix milk, vanilla, and egg whites in a small bowl and set aside.
  3. In a mixer, combine flour, sugar, baking powder, and salt on low speed.
  4. Add butter and mix until pea-sized pieces remain.
  5. Add half of the milk mixture and beat until fluffy, then add the remaining milk mixture and mix briefly.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 20 to 25 minutes until golden and a toothpick comes out clean.
  8. Cool the cake in the pan for 10 minutes, then remove and cool completely.
  9. For the frosting, cream butter until fluffy, then add powdered sugar, cream, vanilla, and salt.
  10. Frost the top of one cake layer, place the other layer on top, and shape into a bunny.
  11. Cut a notch for the neck and head, and use frosting to attach pieces for the tail.
  12. Frost the outside of the cake and sprinkle with coconut.
  13. Create bunny ears from paper and insert them into the cake, adding a jellybean for the nose.
