Instructions
- Preheat the oven to 350°F and prepare an 8-inch round cake pan.
- Mix milk, vanilla, and egg whites in a small bowl and set aside.
- In a mixer, combine flour, sugar, baking powder, and salt on low speed.
- Add butter and mix until pea-sized pieces remain.
- Add half of the milk mixture and beat until fluffy, then add the remaining milk mixture and mix briefly.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 20 to 25 minutes until golden and a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes, then remove and cool completely.
- For the frosting, cream butter until fluffy, then add powdered sugar, cream, vanilla, and salt.
- Frost the top of one cake layer, place the other layer on top, and shape into a bunny.
- Cut a notch for the neck and head, and use frosting to attach pieces for the tail.
- Frost the outside of the cake and sprinkle with coconut.
- Create bunny ears from paper and insert them into the cake, adding a jellybean for the nose.
