Southwest Farro Salad

Ingredients

The salad

  • 1 cup uncooked farro
  • 1 can black beans (14 ounces), rinsed and drained
  • 1 cup chopped fresh tomatoes
  • 2 ears fresh corn, cut from the cob (or 1 ½ cups thawed frozen corn)
  • ¼ cup chopped red onion
  • ½ cup chopped fresh cilantro

The dressing

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • teaspoon cayenne pepper

Instructions

  1. Cook the farro according to the package directions.
  2. In a large bowl, combine the cooked farro, black beans, tomatoes, corn, and red onion.
  3. In a separate bowl, whisk together the olive oil, Greek yogurt, lime juice, chili powder, salt, black pepper, and cayenne pepper.
  4. Pour the dressing over the farro mixture and toss gently to coat.
  5. Stir in the fresh cilantro and serve warm or at room temperature.
