Southwest Farro Salad

The salad

The dressing

Instructions
- Cook the farro according to the package directions.
- In a large bowl, combine the cooked farro, black beans, tomatoes, corn, and red onion.
- In a separate bowl, whisk together the olive oil, Greek yogurt, lime juice, chili powder, salt, black pepper, and cayenne pepper.
- Pour the dressing over the farro mixture and toss gently to coat.
- Stir in the fresh cilantro and serve warm or at room temperature.
