Instructions
- 1. In a large skillet, brown the ground beef, onion, garlic, salt, and pepper over medium heat until the meat is no longer pink.
- 2. Drain the grease and add corn, tomatoes, beans, chiles, cumin, chili powder, oregano, and paprika, stirring to combine.
- 3. Add the zucchini and stir until evenly mixed, then bring to a gentle simmer and cook until heated through and zucchini is tender.
- 4. Season with additional salt and pepper if needed, then lower the heat.
- 5. Pat the mixture into an even layer, sprinkle with cheese, cover, and let sit until cheese is melted.
