Turkey and Zucchini Skillet

Instructions
- Heat a large non-stick skillet over medium heat and add olive oil.
- Sauté onions and garlic with a pinch of salt for about 2 minutes until fragrant.
- Push the vegetables to one side and add ground turkey, breaking it into small pieces and seasoning with salt and pepper.
- Once the turkey is browned, mix it with the onions and garlic.
- Add zucchini, Italian seasoning, more salt and pepper, and diced tomatoes to the skillet.
- Stir everything together and let it simmer for 15-30 minutes based on your preferred zucchini softness.
- Serve over spaghetti squash, rice, or pasta, and top with red pepper flakes and Parmesan cheese.
