Ingredients

The main ingredients

  • 1 pound ground turkey
  • 4-5 cloves garlic, chopped
  • 1 medium onion, chopped
  • 4 medium zucchini, cut into quarters then chopped
  • 2 15 ounce cans diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • to taste salt and pepper

Optional toppings

  • to taste Parmesan cheese
  • to taste red pepper flakes

Instructions

  1. Heat a large non-stick skillet over medium heat and add olive oil.
  2. Sauté onions and garlic with a pinch of salt for about 2 minutes until fragrant.
  3. Push the vegetables to one side and add ground turkey, breaking it into small pieces and seasoning with salt and pepper.
  4. Once the turkey is browned, mix it with the onions and garlic.
  5. Add zucchini, Italian seasoning, more salt and pepper, and diced tomatoes to the skillet.
  6. Stir everything together and let it simmer for 15-30 minutes based on your preferred zucchini softness.
  7. Serve over spaghetti squash, rice, or pasta, and top with red pepper flakes and Parmesan cheese.
