Italian Turkey Zucchini Meatballs

Ingredients

  • 2 lb. lean ground turkey
  • 2 cups shredded zucchini
  • 2 tsp. dried Italian seasoning
  • 2 tsp. garlic powder
  • 1 tsp. onion powder
  • ½ tsp. crushed red pepper flakes
  • 1 tsp. sea salt
  • ½ tsp. black pepper

Instructions

  1. Preheat the oven to 400ºF and line a large baking sheet with parchment.
  2. Shred the zucchini and place it on a double layer of paper towel to absorb moisture.
  3. Combine all ingredients in a bowl and mix well.
  4. Form the mixture into 28 golf ball-sized meatballs and place them on the baking sheet.
  5. Bake for 18-20 minutes until cooked through.
  6. Serve as is or with marinara sauce.
