Instructions
- Preheat the oven to 400ºF and line a large baking sheet with parchment.
- Shred the zucchini and place it on a double layer of paper towel to absorb moisture.
- Combine all ingredients in a bowl and mix well.
- Form the mixture into 28 golf ball-sized meatballs and place them on the baking sheet.
- Bake for 18-20 minutes until cooked through.
- Serve as is or with marinara sauce.
