Italian Turkey Veggie Meatloaf

Instructions
- Preheat the oven to 375°F.
- Sauté bell pepper and onion in a cast iron pan with 1 tsp. of olive oil until they start to soften.
- Grate the zucchini on the small side of a box grater.
- In a large bowl, combine the ground turkey, salt, pepper, Italian seasoning, eggs, ketchup, Dijon mustard, Parmesan cheese, panko bread crumbs, zucchini, and the cooked onion and bell pepper.
- Mix the ingredients gently with your hands and form into small loaves, making a total of 8 loaves.
- Heat a large cast iron skillet on medium-high heat with 3 tsp. of olive oil.
- Add the meatloaves to the skillet when the oil shimmers and brown on both sides without cooking through.
- Remove the skillet from heat, add the Marinara, and transfer to the oven for 7-10 minutes, checking to avoid overcooking.
