Italian Turkey Veggie Meatloaf

Ingredients

The meatloaf

  • 2 lbs. ground turkey breast
  • 2 large eggs
  • 1 cup whole wheat panko bread crumbs
  • ¼ cup Parmesan cheese, grated
  • 2 tbsp. ketchup
  • 1 tbsp. Dijon mustard
  • 1 tsp. salt
  • 3 tsp. pepper
  • 2 tsp. Italian seasoning, dried

The vegetables

  • ½ cup onion
  • ½ cup yellow bell pepper
  • 1 cup zucchini, finely grated

The sauce

  • 1 cup Marinara

Instructions

  1. Preheat the oven to 375°F.
  2. Sauté bell pepper and onion in a cast iron pan with 1 tsp. of olive oil until they start to soften.
  3. Grate the zucchini on the small side of a box grater.
  4. In a large bowl, combine the ground turkey, salt, pepper, Italian seasoning, eggs, ketchup, Dijon mustard, Parmesan cheese, panko bread crumbs, zucchini, and the cooked onion and bell pepper.
  5. Mix the ingredients gently with your hands and form into small loaves, making a total of 8 loaves.
  6. Heat a large cast iron skillet on medium-high heat with 3 tsp. of olive oil.
  7. Add the meatloaves to the skillet when the oil shimmers and brown on both sides without cooking through.
  8. Remove the skillet from heat, add the Marinara, and transfer to the oven for 7-10 minutes, checking to avoid overcooking.
