Mini Turkey Meatloaf

Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine the diced onion, minced mushrooms, chopped parsley, one cup of salsa, rolled oats, beaten egg, garlic powder, dried thyme, and ground turkey. Season with salt and pepper, then mix well using your hands.
- Lightly coat a rimmed baking sheet with cooking spray.
- Form the mixture into six mini meatloaves and place them on the baking sheet. Top each loaf with about a tablespoon of the remaining salsa.
- Bake for 25 minutes or until cooked through.
