Easy Turkey Meatballs

Ingredients

  • 2 lbs ground turkey
  • ¾ cup fresh parsley, chopped fine
  • ¾ cup fresh basil, chopped fine
  • cups ricotta cheese
  • cup grated Parmesan cheese
  • 1 Tbsp grated Parmesan cheese
  • 2 tsp minced garlic
  • tsp salt
  • ½ tsp pepper

Instructions

  1. 1. Preheat the oven to 425°F and line a baking sheet with parchment paper or foil, drizzling it with olive oil.
  2. 2. In a large bowl, mix together the ground turkey, parsley, basil, ricotta cheese, Parmesan cheese, garlic, salt, and pepper until well combined.
  3. 3. Roll the mixture into balls about 2-3 tablespoons in size and place them on the prepared baking sheet, brushing the tops with olive oil.
  4. 4. Bake the meatballs for 20 minutes or until slightly browned.
  5. 5. Let the meatballs rest for ten minutes before serving or add them to a simmering sauce.
