Ingredients

The meatballs

  • 2 lbs ground turkey
  • 1 cup diced red onion
  • 2 cloves garlic, diced
  • 1 ½ cups diced fresh spinach
  • ½ cup grated parmesan cheese
  • 2 large eggs, beaten
  • 1 tablespoon dry oregano
  • 1 tablespoon dry basil
  • 1 tablespoon dry parsley
  • ½ teaspoon salt
  • ½ teaspoon fennel seeds
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

The sauce and cheese

  • 1 jar marinara sauce
  • ¾ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 450°F.
  2. In a large mixing bowl, combine ground turkey, red onion, garlic, spinach, parmesan cheese, eggs, oregano, basil, parsley, salt, fennel seeds, and black pepper, and mix well.
  3. Form the mixture into twelve 2-inch meatballs.
  4. Heat a cast iron skillet over medium-high heat and add olive oil.
  5. Sear the meatballs in the skillet for 3 minutes on each side until browned.
  6. Cover the meatballs with marinara sauce in the skillet.
  7. Transfer the skillet to the oven and bake for 20 minutes.
  8. Remove from the oven, sprinkle with mozzarella cheese, and bake for an additional 5 minutes or until the meatballs reach an internal temperature of 165°F.
