Ingredients

The meatballs

  • 2 lbs. ground turkey
  • 1 cup diced red onion
  • 2 cloves garlic
  • cups diced fresh spinach
  • cup grated parmesan cheese
  • 1 large egg
  • 1 tablespoon dry oregano
  • 1 tablespoon dry basil
  • 2 tablespoons fresh chopped parsley
  • ½ teaspoon salt
  • ½ teaspoon fennel seeds
  • ¼ teaspoon black pepper
  • 2 tablespoons avocado oil
  • 1 jar marinara sauce
  • ¾ cup shredded mozzarella cheese

The cauliflower puree

  • 2 heads cauliflower
  • 4 cups water
  • 2 cloves garlic
  • 1 tablespoon unsalted butter
  • to taste salt

Instructions

  1. Preheat the oven to 450°F.
  2. In a large mixing bowl, combine ground turkey, red onion, garlic, spinach, parmesan cheese, egg, oregano, basil, parsley, salt, fennel seeds, and black pepper, then mix well.
  3. Form the mixture into 1.5-inch meatballs, yielding about 18-20 meatballs.
  4. Heat avocado oil in a cast iron skillet over medium-high heat and sear the meatballs for 3 minutes on each side until browned.
  5. Cover the meatballs with marinara sauce and bake uncovered for 20 minutes.
  6. After 20 minutes, sprinkle mozzarella cheese on top and bake for an additional 5 minutes or until the internal temperature reaches 165°F.
  7. For the cauliflower puree, steam cauliflower florets and garlic in water for about 10 minutes until fork-tender.
  8. Blend the steamed cauliflower and garlic with butter until smooth, adding water if necessary, and season with salt.
  9. Serve the meatballs and sauce over the cauliflower puree.
