Instructions
- Preheat the oven to 450°F.
- In a large mixing bowl, combine ground turkey, red onion, garlic, spinach, parmesan cheese, egg, oregano, basil, parsley, salt, fennel seeds, and black pepper, then mix well.
- Form the mixture into 1.5-inch meatballs, yielding about 18-20 meatballs.
- Heat avocado oil in a cast iron skillet over medium-high heat and sear the meatballs for 3 minutes on each side until browned.
- Cover the meatballs with marinara sauce and bake uncovered for 20 minutes.
- After 20 minutes, sprinkle mozzarella cheese on top and bake for an additional 5 minutes or until the internal temperature reaches 165°F.
- For the cauliflower puree, steam cauliflower florets and garlic in water for about 10 minutes until fork-tender.
- Blend the steamed cauliflower and garlic with butter until smooth, adding water if necessary, and season with salt.
- Serve the meatballs and sauce over the cauliflower puree.
