Cheesy Keto Meatballs and Tomato Sauce

Ingredients

The Meatballs

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup freshly grated parmesan cheese
  • 1 cup shredded mozzarella
  • 1 ½ tablespoons chopped Italian flat leaf parsley
  • to taste salt
  • to taste pepper

The Tomato Sauce

  • 1 28-ounce can whole San Marzano tomatoes, drained
  • ½ cup water
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 pinch crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh basil, chopped

For Frying

  • as needed oil for frying (preferably refined coconut oil or avocado oil)

Instructions

  1. Mix all meatball ingredients in a large bowl until well combined without overmixing.
  2. Use a disher to portion out the meatballs and roll them smooth.
  3. Heat oil in a non-stick skillet over medium-high heat and fry the meatballs in batches until browned.
  4. Transfer fried meatballs to a paper towel-lined plate to drain excess oil.
  5. Blend the drained tomatoes and water until smooth.
  6. In the same skillet, heat olive oil and sauté garlic until fragrant.
  7. Add the blended tomato mixture, Italian seasoning, crushed red pepper, and kosher salt, then bring to a boil.
  8. Reduce heat and simmer for 1-2 minutes before stirring in chopped basil and meatballs.
  9. Serve warm over noodles or on their own.
