Instructions
- Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper or foil.
- In a large bowl, combine grated Parmesan cheese, almond flour, Italian seasoning, sea salt, and black pepper.
- Whisk in coconut milk, grated onion, egg, garlic, and fresh parsley, then let the mixture sit for a couple of minutes.
- Mix in the ground beef by hand until just incorporated, being careful not to over-mix.
- Form the mixture into 1-inch balls and place them on the lined baking sheet.
- Bake for 10-12 minutes until barely done, optionally broiling for a couple of minutes for a golden top.
- Top each meatball with marinara sauce and return to the oven for an additional 3-5 minutes until heated through.
- Garnish with additional fresh parsley before serving.
