Ingredients

The meatballs

  • 1 lb Ground beef
  • 1 large Egg
  • 3 cloves Garlic (minced)
  • 3 tbsp Onion (grated)
  • 2 tbsp Fresh parsley (chopped)
  • ¼ cup Unsweetened coconut milk beverage
  • ¼ cup Grated parmesan cheese
  • ¼ cup Wholesome Yum Blanched Almond Flour

Seasoning

  • 1 tbsp Italian seasoning
  • ¾ tsp Sea salt
  • ½ tsp Black pepper

Topping

  • ¾ cup Marinara sauce

Instructions

  1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper or foil.
  2. In a large bowl, combine grated Parmesan cheese, almond flour, Italian seasoning, sea salt, and black pepper.
  3. Whisk in coconut milk, grated onion, egg, garlic, and fresh parsley, then let the mixture sit for a couple of minutes.
  4. Mix in the ground beef by hand until just incorporated, being careful not to over-mix.
  5. Form the mixture into 1-inch balls and place them on the lined baking sheet.
  6. Bake for 10-12 minutes until barely done, optionally broiling for a couple of minutes for a golden top.
  7. Top each meatball with marinara sauce and return to the oven for an additional 3-5 minutes until heated through.
  8. Garnish with additional fresh parsley before serving.
