Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper or aluminum foil.
- In a large bowl, combine the ground chicken, spinach, Parmesan, almond flour, fresh herbs, tomato paste, garlic, Italian seasoning, salt, black pepper, and smoked paprika. Mix until well combined.
- Using a medium cookie scoop, form the mixture into even-sized balls (about 1 inch) and place them on the prepared baking sheets.
- Bake in the oven for 20 to 22 minutes, or until browned and cooked through (internal temperature of at least 165°F). Broil for the last 1 to 2 minutes for a crispy exterior.
- Remove from the oven, garnish with fresh herbs, and serve with sauce if desired.
