Ingredients

The meatballs

  • 1 pound ground chicken
  • ½ cup Italian seasoned breadcrumbs
  • ¼ cup Italian parsley, finely chopped
  • 1 large egg
  • 2 tablespoon milk
  • 1 tablespoon ketchup or tomato paste
  • ½ cup grated Romano cheese
  • ½ teaspoon granulated garlic
  • ½ teaspoon granulated onion
  • to taste sea salt and pepper

For sautéing

  • ½ cup olive oil

Instructions

  1. Soak the breadcrumbs in milk until soggy.
  2. Heat olive oil in a large skillet over medium heat.
  3. In a medium mixing bowl, combine ground chicken, soaked breadcrumbs, parsley, egg, spices, ketchup, and Romano cheese.
  4. Mix the ingredients until just combined, avoiding overworking the meat.
  5. Roll the mixture into meatballs and place them gently in the heated oil.
  6. Cook meatballs for about 2 minutes without disturbing, then flip and cook for another 2 minutes until browned.
  7. Transfer cooked meatballs to a paper towel-lined plate and continue cooking in batches.
  8. Optionally, place cooked meatballs in marinara sauce to simmer for about an hour or finish cooking in the oven.
