Chicken Meatballs

Ingredients

  • 1 small yellow onion
  • 3 cloves garlic
  • 450-500 g chicken breasts, cut into 1-inch pieces
  • 3 tbsp olive oil, divided
  • ½ cup feta cheese, crumbled
  • ½ cup panko breadcrumbs
  • 1 large egg
  • 2 tsp dried oregano
  • ¼ tsp chili flakes
  • ¼ cup green olives, chopped
  • ¼ cup sundried tomatoes
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Chop the onion and garlic in a food processor.
  2. Add chicken, 2 tbsp olive oil, feta, egg, panko, oregano, chili flakes, olives, sundried tomatoes, salt, and pepper to the processor and pulse until combined without over-mixing.
  3. Form the mixture into meatballs, about 2 tbsp each.
  4. Heat a skillet over medium heat and add 1 tbsp olive oil.
  5. Cook the meatballs, turning occasionally, until browned and cooked through, about 15-20 minutes.
  6. Serve with optional butter and lemon sauce.
