Ingredients

  • 1 cup zucchini, chopped
  • 1 cup carrots, chopped
  • ½ cup parsley, coarsely chopped
  • 3 cloves garlic
  • ¼ cup blanched almond flour
  • 1 large egg
  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon celtic sea salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon chili powder

Instructions

  1. 1. In a food processor, pulse together zucchini, carrots, parsley, and garlic.
  2. 2. Add almond flour, egg, and chicken to the processor.
  3. 3. Season with salt, pepper, and chili powder, then process until thoroughly combined.
  4. 4. Drop tablespoon-sized balls onto a parchment paper-lined baking sheet.
  5. 5. Bake meatballs at 350°F for 20 to 25 minutes.
  6. 6. Serve.
