Ingredients

  • 1 small zucchini
  • 1 pound ground chicken thighs or ground turkey
  • tablespoons extra virgin olive oil
  • ¾ teaspoon Magic Mushroom Powder or kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • teaspoon freshly cracked black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Shred the zucchini and wring out excess liquid until you have about ¾ cup.
  3. In a large bowl, combine the shredded zucchini with ground chicken, olive oil, Magic Mushroom Powder, garlic powder, onion powder, and pepper.
  4. Gently mix the ingredients without overworking the meat.
  5. Optionally, check the seasoning by frying a small patty.
  6. Use a 1½ tablespoon disher to portion out 18 meatballs and roll them into uniform spheres.
  7. Place the meatballs on a greased baking sheet and bake for 20 to 25 minutes, rotating halfway.
  8. Ensure the internal temperature reaches 165°F and the tops are lightly browned before serving.
