Instructions
- Preheat the oven to 400°F.
- Shred the zucchini and wring out excess liquid until you have about ¾ cup.
- In a large bowl, combine the shredded zucchini with ground chicken, olive oil, Magic Mushroom Powder, garlic powder, onion powder, and pepper.
- Gently mix the ingredients without overworking the meat.
- Optionally, check the seasoning by frying a small patty.
- Use a 1½ tablespoon disher to portion out 18 meatballs and roll them into uniform spheres.
- Place the meatballs on a greased baking sheet and bake for 20 to 25 minutes, rotating halfway.
- Ensure the internal temperature reaches 165°F and the tops are lightly browned before serving.
