Ingredients

  • 1 lb ground chicken
  • ¼ cup whole wheat panko breadcrumbs
  • 1 large egg
  • cup sun dried tomatoes, packed in oil, chopped
  • ¼ cup feta cheese
  • ¼ cup parmesan cheese
  • 2 cloves garlic, minced
  • ¼ cup green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 squeeze lemon (optional)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper or spray with nonstick spray.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, sun dried tomatoes, feta and parmesan cheeses, garlic, green onions, parsley, salt, and pepper. Mix until combined.
  3. Using a small to medium cookie scoop, form 2-inch meatballs and place them on the baking sheet.
  4. Bake in the oven for about 20 to 25 minutes until lightly browned and cooked through, ensuring an internal temperature of 165°F.
  5. Squeeze lemon juice over the meatballs before serving, if desired, and serve warm with a Mediterranean salad or brown rice and tzatziki sauce.
