Ingredients

The Meatballs

  • 1 lb ground chicken
  • 3 tablespoons minced red onion
  • 2 cloves garlic
  • 2 teaspoons lemon zest
  • 1 tablespoon fresh dill
  • ½ teaspoon dried oregano
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper

The Bowls

  • 1 cup thinly sliced Persian cucumbers
  • 1 cup grape tomatoes
  • ¼ cup diced red onion
  • cup pitted kalamata olives
  • tablespoons chopped fresh mint
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons red wine vinegar
  • ¼ teaspoon fine salt
  • 4 handfuls chopped romaine lettuce
  • 3 cups cooked rice
  • cup crumbled feta cheese
  • ½ cup Good Foods Tzatziki Dip
  • 1 medium lemon

Instructions

  1. Combine ground chicken, red onion, garlic, lemon zest, dill, oregano, salt, and pepper in a bowl and mix well.
  2. Divide the mixture into 16 portions and roll each into a ball.
  3. Cook the meatballs using your preferred method: air fryer, skillet, or oven.
  4. While the meatballs cook, prepare the marinated veggies by mixing cucumbers, tomatoes, onion, olives, mint, olive oil, red wine vinegar, salt, and pepper in a bowl.
  5. Assemble the bowls with romaine lettuce, cooked rice, marinated veggies, and meatballs. Top with feta cheese and tzatziki sauce, and serve with lemon wedges.
