Instructions
- Combine ground chicken, red onion, garlic, lemon zest, dill, oregano, salt, and pepper in a bowl and mix well.
- Divide the mixture into 16 portions and roll each into a ball.
- Cook the meatballs using your preferred method: air fryer, skillet, or oven.
- While the meatballs cook, prepare the marinated veggies by mixing cucumbers, tomatoes, onion, olives, mint, olive oil, red wine vinegar, salt, and pepper in a bowl.
- Assemble the bowls with romaine lettuce, cooked rice, marinated veggies, and meatballs. Top with feta cheese and tzatziki sauce, and serve with lemon wedges.
