Ingredients

The meatball mixture

  • 2 pounds ground turkey 93% lean
  • 1 cup bread crumbs or panko or rolled oats
  • cup onion, minced
  • ½ cup fresh parsley, minced
  • 2 large eggs
  • 3 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • to taste salt and freshly ground black pepper

For frying

  • ¼ cup olive oil

Instructions

  1. Combine all meatball mixture ingredients in a large bowl and mix well.
  2. Shape the mixture into 1-inch balls, yielding about 48 meatballs.
  3. For baking, preheat the oven to 400°F, line a baking sheet with foil, and place a wire rack on top.
  4. Arrange meatballs on the rack, brush with oil, and bake for 15 to 20 minutes until browned and cooked through.
  5. For frying, heat oil in a skillet over medium-high heat and fry meatballs in batches until browned and cooked through, about 5 to 7 minutes per batch.
  6. To freeze, arrange cooked meatballs in a single layer on a baking sheet, freeze until solid, and then transfer to a freezer-safe container.
