Ingredients

  • 2 pounds ground turkey
  • 1 cup cooked quinoa
  • 1 small yellow onion, diced very small
  • 6 cloves garlic, minced
  • 1 cup chopped spinach leaves
  • ¼ teaspoon red chili flakes
  • 2 tablespoons gluten free tamari or hot sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon flaxseed meal
  • 1 large egg, beaten

Instructions

  1. Preheat the oven to 350°F and prepare a baking pan with cooking spray.
  2. In a stand mixer, combine all ingredients and mix until well incorporated.
  3. Form the mixture into meatballs by rolling them between your hands.
  4. Place the meatballs on the baking sheet.
  5. Bake for 35 minutes, or until golden brown, rotating halfway through.
