In a Hurry Green Curry

firm tofu, cut into ½ inch cubes

peas, fresh or frozen

asparagus, cut into ½-inch segments

Instructions
- In a large pot over medium heat, whisk the curry paste with salt and a small splash of coconut milk, then simmer for a minute.
- Add the sliced onion and sauté until softened, about a minute.
- Stir in the remaining coconut milk and broth, and simmer for another five minutes.
- Taste and adjust the flavor, adding more curry paste if desired.
- Add the tofu, and just before serving, stir in the peas and asparagus, simmering for a minute or two until the vegetables are cooked.
- Finish with a squeeze of lime and the basil leaves, and adjust seasoning if needed.
