Ingredients

The salad

  • 1 15 oz can black beans, drained and rinsed
  • cups corn, fresh or frozen
  • 1 red bell pepper, chopped
  • ½ cup red onion, diced
  • 1 medium avocado, pitted and diced
  • ½ cup cilantro, chopped

The dressing

  • ¼ cup fresh lime juice
  • 1 tsp lime zest
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp cumin
  • ¼ tsp chili powder
  • ¼ tsp onion powder
  • ½ tsp kosher salt
  • a pinch red pepper flakes

Instructions

  1. Chop the bell pepper, onion, and avocado, then drain and rinse the black beans.
  2. In a large bowl, combine the black beans, corn, chopped bell pepper, red onion, avocado, and cilantro.
  3. In a small bowl, whisk together lime juice, lime zest, olive oil, garlic, and spices to make the dressing.
  4. Drizzle the dressing over the salad mixture and toss well to combine.
  5. Cover and chill the salad in the fridge for at least one hour before serving.
