Ingredients

The salad

  • 2 cans black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 whole jalapeno, minced (seeds and ribs removed)
  • 1 cup corn kernels
  • 1 whole avocado, chopped
  • ¾ cup orange bell pepper, seeded and finely diced
  • cup red onion, finely diced
  • cup cilantro leaves, chopped

The dressing

  • cup olive oil
  • ¼ cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper

Instructions

  1. Combine black beans, cherry tomatoes, jalapeno, corn, avocado, bell pepper, onion, and cilantro in a large bowl.
  2. In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss gently to coat.
  4. Serve immediately.
