Ingredients

The salad

  • 3 cans (15 ounces each) black beans, rinsed and well-drained
  • 2 ears corn, shucked
  • 1 cup cherry tomatoes, quartered
  • 1 chopped bell pepper (orange, yellow, or red)
  • 1 cup red onion, chopped
  • ½ cup fresh cilantro, finely chopped
  • 1 medium jalapeño, finely chopped
  • ½ teaspoon lime zest
  • 2 tablespoons lime juice
  • ¼ cup extra-virgin olive oil
  • ¼ cup white wine vinegar
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt

Optional garnishes

  • to taste sliced avocado
  • to taste crumbled feta
  • to taste lime wedges

Instructions

  1. Combine all ingredients in a large serving bowl and toss to mix well.
  2. Taste and adjust flavors, adding more vinegar or salt as needed.
  3. Cover and chill for at least 2 hours or overnight to enhance flavors.
  4. Serve in individual bowls with optional garnishes.
