Ingredients

The dressing

  • 2 pieces scallions
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 teaspoons chipotle chiles in adobo sauce
  • ½ teaspoon honey
  • to taste salt and pepper

The salad

  • 1 tablespoon olive oil
  • ¾ cup frozen corn
  • 1 can (15 ounce) black beans
  • 1 piece avocado
  • 1 medium tomato
  • 2 tablespoons fresh cilantro

Instructions

  1. Whisk together scallions, lime juice, olive oil, chipotles, honey, salt, and pepper in a small bowl.
  2. Heat olive oil in a medium skillet over medium-high heat and add corn, cooking until brown spots form, about 5 minutes.
  3. In a large bowl, combine corn, black beans, avocado, tomatoes, and cilantro.
  4. Drizzle with dressing and stir to combine, seasoning to taste with salt and pepper.
